CEMI
by Apicius Armenia
Experiential Learning Center
CEMI Café is a creative learning lab of Apicius International School of Hospitality in Armenia and an important part of the school’s approach to experiential learning, combining academic instruction with real-life professional practice.

Like FEDORA Bistro in Florence, CEMI Café in Dilijan is designed as a practical training space where students and supervising faculty work together in a real hospitality environment.
Educational Concept
CEMI Café is not simply a café. It is a learning environment, where practical training is a core part of the student journey. Through daily operations, students are able to apply classroom knowledge in a real setting, while developing technical skills, service culture, communication, teamwork, and professional confidence.
The model is based on the idea that learning happens not only through formal instruction, but also through direct interaction with guests, communities, and the realities of hospitality operations.

CEMI Café also creates a direct connection between education and community. By interacting with guests in a live setting, students gain valuable real-world experience while contributing to a welcoming and high-quality public-facing space.

THE ROLE OF APICIUS ARMENIA'S STUDENTS
Students are at the center of the CEMI Café concept.
Through their participation in the café, they gain practical exposure to:
Food preparation
Service
Customer interaction
Hospitality operations
Teamwork and communication
The overall standards of professional hospitality environments
COMMUNITY AND CULTURAL VALUE
CEMI Café also supports broader cultural and social integration goals. By interacting daily with local and international guests, students are exposed to a dynamic environment that helps them better understand hospitality as both a profession and a form of cultural exchange.
The space therefore has a dual purpose:
  • To serve as a high-quality public-facing venue
  • To function as a live educational platform for student development
CONNECTION TO APICIUS PROGRAMS
The experiential learning model of CEMI Café is aligned with Apicius career-oriented hospitality education. Based on the Fedora example, the relevant learning areas include:

  • Hospitality Management
  • Special Event Management
  • Food, Wine, and Wellness Studies
  • Baking and Pastry Certificate Career Programs

In the Armenian context, CEMI Café can become the practical learning hub where these disciplines are translated into everyday practice.

The model is aligned with Apicius’ career-focused programmes in hospitality, food studies, baking and pastry, and event management.
